Cilantro-Lime Brown Rice

A great side dish for all of your favorite Mexican fiestas. It has a great flavor profile with the tangy lime and fresh cilantro. I prefer brown rice to white not only for its higher nutrient-density and fiber but also for its nutty flavor and lovely texture.

Ingredients
  

  • 1 C. Brown Basmati Rice rinsed
  • 2 C. Water
  • 3/4 t. Sea salt
  • 1 T. Lime juice
  • 1/4 C. Cilantro finely chopped

Instructions
 

  • Place water, rice, and salt in a pot and cover. Bring to a boil and then immediately reduce heat to a simmer.
  • Cook for about 40 minutes checking periodically that the rice is not sticking.
  • When rice is tender cover and let rest for 10-15 minutes. Add lime juice, cilantro, and add additional salt to taste.
