Thai Mango Salad with Peanut Dressing
It’s that time of year again on Maui….Mango season! One of my very favorite fruits for sure. There is not much that can beat a ripe, juicy Mango. This salad has all of the flavors when paired with this flavorful Peanut Dressing. Sweet, spicy, a little tangy, salty, and just all around great combination.

Thai Mango Salad with Peanut Dressing
This salad has all of the flavors you want and it's so healthy! A combination of fresh greens, red cabbage, sweet Mango, cilantro, and green onion. Toss with the Peanut Dressing and your tastebuds will be so happy.
Ingredients
For Salad:
- 1 head of romaine or 8 Oz. Spring greens
- 1 Green bell pepper diced
- 1 large Mango diced
- 1 C. Purple cabbage chopped
- 2 Green onions chopped
- 1 Jalapeño minced
- 1/3 C. Cilantro chopped
- 1/3 C. Roasted peanuts
For Dressing:
- 1/4 C. Peanut butter
- 1/4 C. Lime juice
- 1 T. Shoyu
- 1 1/2 T. Rice vinegar unseasoned
- 1 T. Maple syrup
- 1 t. Toasted sesame oil
- 3 cloves garlic minced
- 1/8 t. Red chili flakes
Instructions
- Place all vegetables in a large salad bowl.
- Whisk all dressing ingredients in a small bowl or glass jar.
- Drizzle salad dressing over salad and sprinkle with peanuts.
Made this today for the second time this week. Loved it! What do you think about adding diced cucumber and avocado? To my taste, it worked.
