Easy Vegan Nacho Cheese Sauce
I know, I know! You could never give up cheese. I understand because I felt the same way. But guess what? If you will give yourself 2-3 weeks without cheese, I promise you, it gets easier. And you will find amazing recipes like this that will give you the richness, fat, and flavor that you desire. This particular recipe is great for all of your Mexican favorites such as: queso dip for corn chips, a drizzle over tacos, nachos, enchiladas, tostadas, burritos, or taco salads. It can be thicker like cream cheese or more like a sauce just by adjusting the amount of water.
It is simple. Get your ingredients together and blend until smooth.

Easy Vegan Nacho Cheese Sauce
Ingredients
- 3/4 C. Almonds raw
- 3/4 C. Water add more or less to your consistency preference
- 1/3 C. Lemon Juice fresh squeezed
- 3-4 cloves Garlic
- 1/4 C. Onion
- 2 T. Shoyu
- 1 t. Apple cider vinegar
- 1/2 t. Cumin powder
- 1/2 t. Coriander powder
- 1/2 t. Smoked paprika
- 2 T. Nutritional yeast
- 2 T. Chipotle in adobo sauce or your favorite hot sauce to taste
- 1/4 t. Chili Powder
Instructions
- Add all ingredients to a blender, preferably high-speed, and blend until it becomes a creamy goodness.
